I run BOINC on two machines. I'd like to add Setiathome to my PC, but I no longer have access to my old email address, and I cannot recall the password.

I am currently running Setiathome on my Mac, and Asteroidsathome on both machines. Both machines use the fuzzy2k account.

Where would I find the information I need to be able to change the email that a password reset token gets sent to?

Also, how do I use that info?

Use boinccmd tool and then the [weak] account key allows attaching without password, provided you have an existing Seti account.

boinccmd --project_attach URL account_key

Most, but not all use same email/password across all projects to ensure that 3rd party statistics sites like BOINCstats can roll up the project statistics... same email = same CPID mechanics.

Not having access to 'old' email address mail is a problem. There's no method [ that I know] but to grovel and proof with project admins to recoup.
