I want to make a two week holiday and take my laptop with me.
But I dont want to suspend the 3 running Boinc-jobs for this long time.
So I want to let the jobs get finished short time before leaving, but prevent the system from loading new jobs which will be interrupted during the holiday, and start with new jobs after the journey.

How can I manage this?

In the Projects tab (BOINC manager advanced view), select "No New Tasks" for each of your projects. When back from holyday, select "Allow New Tasks" again.

If you are using an older version of BOINC, you'll have to report uploaded tasks by selecting "Update" in the Projects tab. The newest versions do that automatically when in NNT-mode.
